I have been vegetarian for about 12 years. This is not because I do not like meat but I believe that intense farming and the slaughter processes are, quite simply, cruel to animals.
Having researched your farming and visited the farm I fully endorse your farming methods and feel able to eat you venison for this reason.
On boxing day we had friends over and cooked a very large casserole of osso buco ,from your own recipe, served simply with mashed potatoes and vegetables. Everyone was very impressed with the dish and your farm and its farming methods proved a good conversation piece for the evening.
Knowing that I am vegetarian they all said that it was a lovely surprise because they usually receive “veggie” fare
I can now eat your venison knowing the background. There is always venison in my freezer and will continue to buy it either on line or when I am up in Fife.

We ate the saddle of venison on Christmas eve. It was perfect, rich, succulent and full of flavour. We enjoyed with a red wine/juniper berry sauce.
When we saw the joint arrive and felt the bone we thought we would not have enough, but the joint is deceiving with the meat being so dense one could only eat a limited amount. In fact we only ate one half side and a couple of slices from the other half, so plenty of leftovers to enjoy again.
Anyway, we thoroughly enjoyed the venison and just wanted to let you know it was great. Thank you for fulfilling a late order and making the effort to get ours to us on time despite the conditions. We will certainly buy venison from Fletchers again, and will recommend Fletchers to others for quality meat and customer commitment.

The long weekend was a fantastic success, anchored by a sit-down meal for 32 on the Saturday night. There were 10 school friends, 10 from uni and 10 chums who flew in from around Zurich. Plus Mum and Dad...
The meal starred your venison casserole and I attach a picture of the dinner, with the mob tucking in.
We began with Lanson Black Label and Dunkeld Smokehouse's Atlantic smoked salmon, followed by Lidel's Haggis Balls - a somewhat whacky combination but very much in theme with the 'Scottish' flavour of the evening..!
More bubbly followed for toasts and speeches.
Then we had the casserole with baked Roosters and roast root vegetables, with an Acacia Hill Cabernet Shiraz on the side.
Finally, we had home-made Cranachan with local raspberries and a Scottish-Swiss cheeseboard from the Swiss Cheese Shop in Blairgowrie - their cave-aged Emmental went down a storm with our Swiss friends..!
All rounded off with a selection of malts brought in from around the globe.
Sunday night saw us have a 'left-overs' dinner when the final dry-cured bacon, sausages and burgers from the breakfast pack supplied by Irvines of Blairgowrie was cooked up and served with the last of the casserole - a sublime feast for a blustery Sunday night.
Eveyone commented on the quality and tenderness of the venison, which - by Sunday - had matured and mellowed even more and went down a dream with a somewhat more varied mix of reds, long-aged whiskies and the last of the cheeseboard.
Gulabin Lodge was a perfect venue for the event, With only one bed unused the house was full. However, the two comfy sitting rooms with blazing log fires provided plenty room to spread out and relax and the house proved the perfect base for introducing our visitors to Highland Perthshire... even the Swiss were impressed with the dramatic scenery of scudding clouds, showers, rainbows - and even the odd sunny hour or two while guests went over the lodge's 'high ropes' course or walked or climbed in the area.
So thanks to you all - and your butcher - for helping to make things such a success. It was a memorable weekend, one that will be talked of for years to come.

The meat arrived as planned on Tuesday morning and I cooked it last night following your guidelines sent through with the venison. It was absolutely superb and was so flavoursome and juicy brown on the outside and nice and pink in the middle my girlfriend said it was the nicest meat she has tasted.

I though you might like to know that our venison arrived safely on Tuesday this week in very good order. I'm most impressed with your efficient service, and the meat itself is a revelation. What an difference from the strange-smelling, hair-riddled sinewy stuff that some butchers foist on their customers. (Yes, I've had the odd bad experience!) I've already tried a couple of recipes from Nichola's excellent book, and you can be sure that we'll be ordering from you again, when we've eaten our way through this lot (which won't take long at the rate we're going).

The holiday dust has now settled and been hovered up so I find time to write and thank you so much for our fabulous feast on Christmas Eve. The venison loin was delicious and my guests were full of compliments. It truly was the highlight of the culinary part of this year's Christmas. I will not hesitate to come to you again for your meat for our the next celebratory feast.
Thought you might be interested to know that, following your advice to add something fruity but having none of the suggested fruits, I used a some left-over stewed rhubarb (cooked according to Jane Grigson's method in orange juice). Result very moist and delicious burgers.
We eat little meat but make an exception for your venison which we regularly enjoy especially when we have friends staying.

I would have preferred to have it delivered earlier, unfortunately last week I was out of the country and I was told that the Monday delivery was not a good idea, so the only available date was tuesday/wednesday.

Today I cooked your Rack of venison for some friends. It was superb. I marinated it in herbed wine (juniper berries, garlic, thyme) for 6 hours and then browned and cooked quickly in the oven - after resting the meat was moist and succulent. A complete treat. Thanks.
Maureen and I wanted to thank you for parcel of meat we received safely from you on Friday. We found out about you from the report in Country Living magazine and since we have a great interest in animal welfare and liked what we read and subsequently found out about you from your web site, we decided to place an order. We were so impressed with your prompt service (the parcel arrived here at 8.30 in the morning) and of course over the weekend we have eaten some of the items. The liver and sausages were both absolutely delicious and we're looking forward to the other items now in the freezer.

(Here’s how it ended up: the shoulder had a 48 hour braise then turned into a suet pudding, loin 28 mins in a waterbath, seared and served over sauerkraut braised in a venison stock with thyme and juniper, some carrot puree and vichy carrots, with the shoulder braising jus)

I ordered a sadle of venison from you two weeks ago for a very important dinner party I was to host and hoped to impress my dinner guests with venison cooked in a port wine recipe.
It was sooooooooo delicious, sumptious even, juicy and tender and so full of beautiful flavour. I can't tell you how happy I was with the results and my guests just loved it, my dinner party was such a sucess, so I wanted to tell you how happy I was that I chose Fletchers to supply my order of venison.

Would just like to say thank you for the wonderful venison sirloin which arrived ready for Christmas. The delivery amazed me as the previous night saw our first deluge of snow and nothing was moving down here. However, your driver arrived only slightly late which surprised me as I had written off any notion of seeing the venison that day. I cooked it en croute for Christmas Day and I can safely say it was the most delicious Christmas dinner ever. The meat simply melted in our mouths and the flavour was wonderful. It was a huge success and I shall certainly be placing another order for next year (and before!). Thank you again for a wonderful service and delicious meat.

My girlfriend and I called in to your farm shop on Saturday 31st July. We found your shop pretty much by accident. We were greeted by a very pleasant Nichola Fletcher who helped us choose a lovely piece of venison, and also gave us invaluable directions on how to cook the venison to perfection.
The first time I tried venison was about 7 years ago when I moved across from Northern Ireland , and I immediately fell in love with it. We would just like to say, that without out a doubt, that was the most delicious cut of meat we have ever eaten.
